Abstract

Gljive zauzimaju važnu ulogu u ljudskoj prehrani, dok su neke, poput tartufa, i vrlo cijenjena gastronomska namirnica visoke komercijalne vrijednosti. Ljetni tartuf (Tuber aestivum) široko je rasprostranjen na području Hrvatske, gdje uspijeva na različitim staništima. Mikorizne gljive poput tartufa opskrbljuju simbiotsku biljku mineralnim tvarima i vodom te akumuliraju metale sprečavajući njihov prijelaz u biljku. Kako bi se istražio utjecaj geokemijskih značajki tla na elementni sastav tartufa u ovom radu je, primjenom tehnike spektrometrije masa uz induktivno spregnutu plazmu, analizirana koncentracija 12 elemenata (Al, Ca, Cu, Fe, K, Li, Mg, Mn, Na, P, S i Zn) u uzorcima tla i ljetnog tartufa sa 13 lokaliteta na području Hrvatske. Dodatno, analizirana je i kora simbiotskih biljaka s ciljem istraživanja raspodjele elemenata u mikoriznom sustavu. Uz elementni sastav, u tlima je određen i kapacitet kationske izmjene (CEC) i vrijednost pH koji nisu pokazali statistički značajnu korelaciju s koncentracijama elemenata u tartufima. Bioakumulacijski potencijal tartufa utvrđen je za nutrijente K, P i S te mikroelemente Cu i Zn na različitim tipovima tla s različitim biljnim partnerima. Koncentracije Al, Fe i Mn u nekim uzorcima tartufa više su od preporučenog maksimalnog dnevnog unosa tih elemenata te je potrebno uzeti u obzir potencijal tartufa kao izvor metala u prehrani čovjeka.

Abstract (english)

Mushrooms have an important role in the human diet and some, such as truffles, are prized for their specific aroma and are of high commercial value. Summer truffle (Tuber aestivum) is widespread in Croatia where it thrives in various habitats. Mycorrhizal fungi such as truffles, supply the symbotic plant with minerals and water while also accumulating metals to prevent their transition into the symbiotic plant. In order to investigate the influence of soil properties on chemical composition of truffles, the concentrations of 12 elements (Al, Ca, Cu, Fe, K, Li, Mg, Mn, Na, P, S and Zn) were determined in soil and truffle samples from 13 locations in Croatia by HR-ICP mass spectrometry. Also, with the aim to investigate the distribution of elements in the mycorrhizal system, elemental composition of the bark of symbiotic plants was analyzed. In addition, the cation exchange capacity (CEC) and pH of the soil samples were determined but showed no statistically significant correlation with the concentrations of elements in truffles. Bioaccumulation in truffles was determined for nutrients K, P and S and trace elements Cu and Zn on different soil types with different plant partners. In some truffle samples, concentrations of Al, Fe and Mn were higher than the recommended tolerable daily intake of these elements which shows the potential of truffles to be the source of metals in human nutrition.
