Abstract

Osnovni cilj rada jest ukazati da je za kafiće važno gdje se nalaze. Međuodnos lokacije i drugih obilježja istražen je na primjeru zagrebačkih kafića, a podaci su prikupljeni u dva navrata: 2007. godine anketirani su posjetitelji 62 kafića u različitim dijelovima grada, a 2017. godine kartirani su kafići dijela Donjeg grada i Novog Zagreba u kojima je provedeno 17 polustrukturiranih intervjua s vlasnicima kafića te je popisivanjem dobivena informacija o demografskoj strukturi gostiju. Kako je prema socio-ekonomskim, stambenim i drugim objektivnim pokazateljima moguće konstatirati dihotomiju između zagrebačkog centra i periferije, pretpostavljeno je da između „kvartovskih“ novozagrebačkih i kafića u „centru“ postoje značajne razlike. Rezultatima je potvrđeno da su cijene kave veće u Donjem gradu, čije kafiće za razliku od periferijskih u većoj mjeri posjećuju mlađi posjetitelji i žene. Ipak, govoreći o centralnosti i perifernosti kao lokacijskim čimbenicima kafića, pokazalo se da su mikrolokacijske posebnosti značajnije od onih širih prostornih skala.

Abstract (english)

The main aim of the thesis is to throw a light on the importance location has for coffee shops. The relationship between the location and other features was studied on the example of coffee shops in Zagreb. Data was gathered on two occasions: in 2007 a survey was conducted among guests in 62 coffee shops in various parts of town and in 2017 coffee shops from Lower Town Zagreb and New Zagreb were mapped and semi-structured interviews were carried out with the owners. These provided information about the demographic structure of the guests. Since socio-economic, residential and other objective indicators have shown a dichotomy between the centre of Zagreb and the suburbs, one can assume that there are significant differences between the “neighbourhood“ coffee shops of New Zagreb and those in the “Centre“. The results have confirmed that the prices of coffee are higher in Lower Town Zagreb coffee shops which are mainly visited by young people and women. However, speaking of centrality and peripherality as locational factors of coffee shops, microlocational features have proved to be more significant than those of broader spatial scales.
