Abstract

Marikultura podrazumijeva uzgoj morskih organizama u moru ili bočatoj vodi. Za Hrvatsku i Jadransko more prepoznatljiv je uzgoj ribe i to lubina (Dicentrarchus labrax Linnaeus, 1758) komarče (Sparus aurata Linnaeus, 1758) kao dvije najzastupljenije riblje vrste u uzgoju. Riba je nutritivno visoko vrijedna namirnica. Bogata je bjelančevinama i mastima. Masti ribe sadrže masne kiseline potrebne organizmu za odvijanje metaboličkih funkcija, a dijele se na zasićene i nezasićene. U periodu od 14. prosinca 2018. do 16. siječnja 2019. prikupljeni su uzorci prirodnih i uzgojenih brancina i komarča te su podjeljeni u tri različite masene kategorije. Hidrolizom i ekstrakcijom dobiveni su ukupni udjeli masti. Plinskom kromatografijom pripremljenih metilnih estera masnih kiselina (FAME) određen je sastav masnih kiselina te njihova koncetracija izražena kao postotak određene masne kiseline u 100 g masti te kao masa pojedine masne kiseline u 100 g uzorka. Uzorci uzgojene ribe bogatiji su nezasićenim masnim kiselinama u odnosu na uzorke prirodne ribe čemu najviše doprinosi visoka koncentracija linolne kiseline. Proveden je i anketni upitnik o konzumaciji ribe na 279 konzumenata, a rezultati pokazuju kako je odabir ribe temeljen na navikama i tradiciji.

Abstract (english)

Mariculture represents breading of marine organisms in the sea and in the fresh water with higher salinity. Croatia and the Adriatic Sea are most recognizable for the fish farming, especially for the sea bass (Dicentrarchus labrax Linnaeus, 1758) and white gilthead sea bream (Sparus aurata Linnaeus, 1758) which are two most common fish species in mariculture of this area. Fish is nutritionally high-value food. It is rich in proteins and fats. Fish fats contain fatty acids which are necessary for the metabolism to function and are divided into saturated and unsaturated. In the period from 14th December to 16th January samples of natural and wild sea basses and sea breams were collected and divided into three categories differed by mass. Total fat in the samples was obtained by hydrolysis and extraction. Using the gas chromatography on the prepared fatty acid methyl esters (FAME), fatty acid composition and their concentration expressed as a percentage of each fatty acid in 100 g of fat and as the mass of paticular fatty acid in 100 g of sample were determined. Samples of farmed fish are richer in unsaturated fatty acids compared to samples of wild fish, most of which contribute to the high concentration of linoleic acid A questionnaire on fish consumption was also conducted on 279 consumers and and the results show that the choice of fish is based on habits and tradition.
